T1 Recipes

Recipes that allow for easier blood sugar control!

Growing up, I had the blessing of being raised by a mother who is an exceptional baker. Some of my fondest memories as a child as of baking with her. Also, some of the most traumatic! Ask anyone in our family about the strawberry shortcake that we made for my Dad’s birthday that we dropped on the floor. I was probably about six years old and I was devastated, crying my eyes out, until we went to the store and bought a new one for him! As I got older, I continued baking and even recruited some of my college friends to be regular taste testers for me. Practice makes perfect, right? 

Then I was diagnosed with T1 and when I was first diagnosed, I went super low carb, all the time because I was afraid that carbs were going to kill me.* I got pretty tight control of my BGs pretty quickly but I was afraid I wouldn’t be able to eat any of my baked goods anymore! Once again, I was devastated! Luckily, not too long after, the Keto diet became a big thing and I started finding a bunch wonderful new recipes** and techniques. The best part is many of them are high in fat and low carb meaning they have minimal impact on BGs! I still make some of traditional baked goods but now I also incorporate many low carb substitutes that are good enough that everyone (not just my T1/Keto friends) really enjoys!

Since this is a hobby that I really enjoy, I’ll share my best recipes with you all, if you promise to share yours with me! Life is no fun without little treats along the way!

*I’ve since learned that I can have carbs and maintain tight control. It is just easier for me if I keep my carbs lower most of the time. You should do whatever works best for you!

**That I’ve tweaked and made my own. Experimentation doesn’t just apply to diabetes management or training you know!
